Get that crock pot out of your pantry! It’s the perfect time of year to make delicious & easy meals for you and your family with that fabulous appliance known as a slow cooker.

With St.Patrick’s Day nearing, here is a meal that will fit perfectly into your Irish celebrations…Crock Pot Baked Potato Soup! Potatoes and Ireland go hand in hand. My ancestors came over after the Great Potato Famine, so you could say that if it wasn’t for potatoes, I wouldn’t be here today! So potato, I thank you and celebrate you and my Irish heritage! I have tried to make potato soups in the past, but I have to say that I FINALLY found a keeper with this recipe, and I think it’s because there is CREAM CHEESE in it, instead of using milk or heavy cream. You can use light or fat free cream cheese. I used Green Mountain Farms Greek yogurt/cream cheese blend.

In slow cooker, add potatoes, onion, garlic & chicken broth. Cook on high for 6 hours or low for 10.
Add the softened cream cheese and puree soup with an immersion blender until the cheese is melted and incorporated and about half the soup is pureed. If you don’t have an immersion blender, you can put half the soup and the cream cheese in a blender to puree up, then add back into the crock pot.
Stir well, and serve with garnishes of your choice!
